After reading Such A Fun Age by Kiley Reid (read my review here!), I wanted to make a dessert that featured nuts of some kind! Pecans, walnuts, I wasn't sure, but I found a recipe for these delicious pecan clusters on All Recipes.
This recipe is super quick and easy and was one of the only ones I could find that didn't require corn syrup. All ingredients were things I could easily get on my next Trader Joe's run!
Ingredients:
1 (14 oz) package individually wrapped caramels, unwrapped
3 TBSP butter
2 TBSP water
2 c. chopped pecans
1 lb. dark chocolate, broken into small pieces
Instructions:
Place caramels, butter, and water in a microwave-safe bowl. Microwave on high, stirring every 30 seconds, until smooth, about 3 minutes.
Stir in pecans.
Drop caramel pecan mixture by spoonfuls onto parchment paper.
Place in freezer for 15 to 20 minutes.
Place chocolate in a microwave-safe bowl and microwave on high, stirring every 15 seconds, until melted and smooth, 1 to 2 minutes.
Dip each caramel cluster into chocolate using until coated; place on parchment paper to dry.
Chill until firm, if necessary.
These little clusters were the perfect afternoon pick-me-up! I also saw in the comments of the original recipe that someone replaced the water with heavy cream...sounds delicious. Let me know if you've made any other good replacements here!
