After reading Chilling Effect by Valerie Valdes (book review here), I was inspired to make these gorgeous galaxy donuts from Kitchen Stories. I was so proud of how they turned out I wanted to share the surprisingly easy recipe!
Note: make sure you have a kitchen scale - this recipe uses weight measurements. There is an option on the original website to switch this.
Ingredients:
500 g buttermilk biscuit dough (I just bought a can of Grands)
1 l vegetable oil for frying
200 g confectioner's sugar
6 TBSP heavy cream
½ tsp vanilla extract
¼ tsp salt
food coloring
Instructions:
Cut out a hole in the center of each donut using a bottle cap, piping tip, etc.
In a deep frying pan, heat the oil to approximately 180°C/356°F.
Fry the doughnuts until golden brown on both sides for approximately 2-3 minutes. Transfer the doughnuts to a paper towel-lined plate to drain. You can also put them on a drying rack over a baking sheet.
In a large bowl, mix the confectioner’s sugar, cream, vanilla extract, and salt.
Add the food coloring and swirl to make a pattern as desired. I made four bowls of icing (white, blue, pink, and purple) and then layered them together in a fifth bowl.
Dip the top side of the donut into the icing and place it bottom side-down on a wire rack to set.
A few things I learned while trying this recipe? The donuts take longer to fry than you would expect. I was too eager to pull them out of the oil, which left me with slightly undercooked donuts. Also, make sure you let the donuts completely cool before adding icing - my icing wanted to slide off a few of them because they were too warm.
